Pasta and vegetables is a classic weeknight meal. In my house I often make it to use up left over vegetables. The other day these veggies happened to be the last of my yellow and red peppers, and an onion. I also had some cooked chicken to throw in. This dinner comes together in no time and is always a hit. An easy and delicious whole wheat pasta with vegetables and chicken recipe.
- olive oil: 1 tablespoon
- unsalted butter: 1 tablespoon
- kosher salt: to taste
- yellow onion, peeled and diced: 1
- large red pepper, seeded and chopped: 1
- large yellow pepper, seeded and chopped: 1
- garlic clove, finely minced: 1
- large chicken breasts, cooked and cubed: 2
- parmesan cheese: for serving
Step 1: Bring a large pot of salted water to a boil and cook the penne according to package directions. Drain and reserve.
Step 2: Meanwhile, in a large skillet warm 1 tablespoon of olive oil with 1 tablespoon of unsalted butter. Add the onions, peppers, and salt and cooked until they are softened an wilted. About five minutes. Then, stir in the garlic and cook for an additional minute.
Step 3: Then, toss in the cooked chicken and cook until heat through. About 4 minutes. Add the cooked penne to the skillet and stir everything together.
Step 4: Pour the pasta into bowls and top with Parmesan cheese. Serve.
