Whole Grain Pretzel Bites Recipe
Ditch the greasy popcorn for these nummy, salty treats!
- whole spelt flour: 2½ cups
- warm water: ¾ cup
- melted butter: 1 tablespoon
- active dry yeast: 1 teaspoon
- sugar: ½ tablespoon
- salt: ¾ teaspoon
- boiling water: 3 cups
- baking soda: 2½ tablespoons
- egg: 1
- water: a splash
- coarse sea salt: for sprinkling
Step 1: Using your hands, stand mixer (with dough hook), or bread maker (dough setting), make the dough. Mix together the flour, water, melted butter, yeast, sugar, and salt, until the dough forms. Transfer to a greased bowl, and allow to rise in a warm, draft-free place for about 1 hour (or until the dough doubles in size).
Step 2: Preheat oven to 400 degrees. In a large pot bring the 3 cups of water and baking soda to a boil. Line a baking sheet with parchement paper, and lightly grease with oil.
Step 3: Divide prepared dough into three equal parts. Take each piece individually and create 10-inch-long ropes on the countertop. Using a sharp knife or dough cutter, cut 10 equal pieces. Repeat with the rest of the dough.
Step 4: Carefully drop the dough pieces in to the boiling water, and cook for 1 minute.
Step 5: Using a slotted spoon, transfer the dough pieces onto the baking sheet, making sure not to transfer too much water onto the baking sheet.
Step 6: Evenly distribute the bites on the baking sheet, making sure they don't touch each other.
Step 7: Whisk together egg and a splash of water. Brush the tops with egg wash, and sprinkle with coarse sea salt. Bake for 10 minutes or until tops are golden brown.
