These days I'm always looking for an easy and yummy treat to make for my family. These patriotic lemon bars are low-fat, relatively healthy for a dessert, and SUPER easy (there are only four ingredients, including the fruit!). Oh, and they're delicious. They're the perfect summer treat to celebrate July Fourth! And you can change out the fruit, or make them with only two ingredients if you just want plain lemon bars. (When I make them that way I dust them with powdered sugar!) Here's how to make them, patriotic style.
Patriotic Lemon Bars for Fourth of July
Yummy lemon bars to celebrate America's birthday!
- angel food cake: 1 box
- lemon fruit filling or pie filling: 1 15 oz jar or can
- sweet red cherries, stems and pits removed: for topping (If you need a pitter, I love this one.)
- blueberries: for topping
Step 1: Preheat the oven to 350 F.
Step 2: In a large bowl, stir together the box of angel food cake mix and the jar of lemon filling. Stir until mixed but still lumpy.
Step 3: Pour the mixture into a greased 9x14 inch pan.
Step 4: Place cherries into the mixture to make your American flag stripes. It is better to leave at least an inch or two of space between each stripe so the cake portion can bake fully.
Step 5: Place the blueberries in the upper left corner of the pan in the cake mixture, to make the "stars" for the flag.
Step 6: Bake for at least 30 minutes, or until golden brown all over. You may have to bake for a few more minutes if you notice the cake around the fruit isn't fully baked.
Once cooked, allow bars to cool fully before cutting. Slice and enjoy!
I'm sorry I don't have a photo of the finished product, but they were gone fast! They slice well and make a great dessert for July Fourth picnics.
