Who doesn’t love a pie that’s portable, amiright? These apple hand pies are easy to eat and even easier to make thanks to store bought pie dough. It’s the perfect way to use up all of those pickins from your yearly apple orchard visit. The filling contains minimal sugar, so you can feel good about feeding them to your kids for breakfast or a snack, but be sure to save a few for yourself!
Apple Hand Pies
A sweet fall flavored treat healthy enough for breakfast and yummy enough for an after-dinner treat.
- unsalted butter: 2 tablespoons
- apples, peeled and diced, small (I like to use Fuji, but you can use your favorite apple.): 6
- brown sugar: 2 tablespoons
- cinnamon: ½ teaspoon
- lemon juice: of ½ lemon
- flour: 1 tablespoon + more for rolling out dough
- frozen pie dough, thawed: 1 sheet
Step 1: Melt butter in a large skillet over medium heat.
Step 2: Add in apples, sugar. cinnamon, and lemon juice. Stir.
Step 3: Cook apples until they are soft, about 8 minutes. Stir in flour and cook for 30 seconds more. Turn off flame and allow mixture to cool while you prepare the dough.
Step 4: Preheat oven to 350 degrees, and line a baking sheet with parchment or a reusable silicone liner.
Step 5: Roll out dough onto a floured surface into a 10-12 inch circle. Using a 3 inch glass or cookie cutter, cut out circles.
Step 6: Place 1 tablespoon of filling into the center of each dough disk.
Step 7: Fold over half of the dough to form a semi-circle and use the tines of a fork to seal the edges. TIP: Dip fork in flour before sealing to prevent it from sticking.
Step 8: Place hand pies onto prepared baking sheet, brush each pie with egg wash, and prick one or two holes into the top of each with a sharp, pointy knife.
Step 9: Bake for 18-20 minutes or until pies are slightly golden brown. Serve as is or dusted with powdered sugar.
