    Ingredients:

    • For the filling:
    • mashed sweet potato: 1 1/2 cups (2 medium-sized)
    • unsalted butter: 2 tablespoons, melted
    • whole milk: 1/4 cup
    • maple syrup: 2 tablespoons
    • egg: 1, large
    • salt: 1/4 teaspoon
    • For the Topping:
    • pecans: 1/3 cup, roughly chopped
    • all-purpose flour: 1/4 cup
    • packed brown sugar: 1/4 cup
    • unsalted butter: 2 tablespoons, melted
    • pumpkin pie spice: 1/4 teaspoon
    • salt: 1/8 teaspoon

    Directions:

    Step 1: Preheat oven to 350 degrees F. Steam or boil peeled sweet potatoes until tender. Mash until smooth and allow to cool slightly before whisking with the melted butter, milk, maple syrup, egg and salt.

    Step 2: Lightly grease ramekins with extra melted butter or cooking spray. 

    Step 3: In a medium-sized bowl combine the chopped pecans, flour, brown sugar, butter, pumpkin pie spice, and salt. 

    Step 4: Transfer the sweet potato mixture evenly into the 5 greased ramekins. Sprinkle the pecan crumbles evenly over each ramekin and bake in preheated oven for 25 minutes or until the centers are set and the topping is golden. Allow to cool slightly before serving.
